Here in the low country …many farmers are putting in seedlings for a second crop which means tomatoes are still ripening – in September!
I love them in caprese salad with mozzarella and basil, sandwiched between sourdough with mayo and onion …and pictured here with Vidalia onion, cucumber and leftover corn I chilled and cut off the cob. Drizzled with my homemade French Vinaigrette… it’s the perfect side dish for these hot and humid days we’ll be having on into late fall.

French Vinaigrette
1/4 cup red wine vinegar
1 TBSP fresh lemon juice
Grated Zest of one lemon
1 – 2 cloves garlic, minced
1 heaping tsp whole grain mustard
1 tsp coarse kosher salt
1/2 tsp freshly ground black pepper
1/4 cup Extra Virgin Olive Oil
In a small bowl, whisk together all ingredients while slowly drizzling in the olive oil to emulsify.
This, my friends …is my favorite vinaigrette I make often and keep in my fridge for almost every salad I make and I also love it as a dip for grilled cheese sandwiches. I hope you make it!
